Healthy Choice is repackaging their frozen entrees and adding to their line up. To my surprise, they've added quite a few vegetarian options. Here are a couple of our favorites so far.
In summary...
This week is about rethinking. What are your favorite meat meals? How can you turn those veggie? I've made a veg shepherd's pie, eggplant parmigiana, stir fry and one of my signature dishes, balsamic chicken, without the meat.
Remember there are things you can add for texture and flavor -- portabello mushrooms, tofu crumbles, eggplant. Just experiment and explore.
It's a big flavor world out there...make it yours!
I was thinking about trying one of those grilled tofu steaks but I don't actually like the texture of tofu! So I'm not brave enough to try one.

Tonight I had a grilled veggie french bread pizza and a salad.
Have you thought about making homemade potato pancakes? Here's a yummy recipe:
Potato Latkes
1-1/2 pounds potatoes, peeled and grated
1 medium onion, peeled and grated
3 tablespoons cornstarch
1 tablespoon fresh parsley, finely chopped
dash of pepper
2 tablespoons tamari or soy sauce
Mix all the together in a large bowl. Form 3” patties and fry in a lightly oiled pan over medium heat for 10 minutes. Flip latkes and fry for another 10 minutes until crisp on both sides. Serve warm.
Matt LOVES them! Sweet potato pancakes are also good.
A certain other retail grocer that is more vegetarian-friendly has cheese crumbles on sale 2 for $4. I bought 4 containers of feta cheese (doesn't expire until August). Don't know if I ever mentioned about our favorite thin crust pizza, but it's a quick and easy meal!
Get a large tortilla wrap (we like to get sun dried tomato or spinach ones). Warm up in the oven just to get it slightly hardened. Put olive oil (and maybe a little butter spread around), garlic powder, fresh chopped spinach and basil, feta cheese, mozzarella cheese and slices of plum tomato and put it in the oven for a few minutes on a cookie sheet. It's soooooooooo killer. Sometimes I have to make two for myself, though one is plenty filling!
